The production takes place entirely at the distillery: the barley and rye malt used is 100% malted on traditional malting floors and then kilned over local Danish peat and heather, creating a soft, bonfire-like smoke. Distillation is carried out twice in 24 small direct-fired copper pot stills before the whisky is matured in American oak casks and finished in Madeira casks. This combination ensures depth, balance and a particularly round structure. The whisky is bottled at 43% vol. and is not chill-filtered, ensuring that its structure, aroma and character are fully preserved.
