The Plantations Rums are no longer an insider tip. The excellent rums are mainly collected in the Caribbean and also in South America and then brought to France, where they receive their final touch. In Ars in France, the rum is subsequently stored for several months in small discarded oak cognac barrels. This type of aging is called "double aging", this technique was already used in the 18th and 19th centuries.
The production of Plantation Rum Panama 2007 is made from molasses and a three-day fermentation, in the Alcoholes Del Istmo Distillery.
In Panama, this rum matures for 11 years in bourbon barrels, then matures for another 24 months in ex-cognac French oak barrels, in the cellars of Chateau de Bonbonnet/ Cognac. The finish this rum receives for 10 months in Syrah (Cote-rotie) barrels.
Syrah is a grape variety originally cultivated in the Rhone Valley (France). Outside Europe, the variety is known as "Shiraz".
This is one of the most important red grape varieties of all.
