These high-quality rums originate mainly from the Caribbean and South America before being brought to France for their final refinement.
In Ars, France, the rums are stored for several months in small, decommissioned oak cognac barrels, which is known as "double ageing" and was already practised in the 18th and 19th centuries.
The Plantation Rum El Salvador 2015 Single Cask Pineau des Charentes Finish undergoes a defined ageing process that includes column style distillation. This unique rum began its journey in the 2015 vintage. For the first 5 years, it matures in bourbon barrels, resulting in a harmonious ester content of 35 g/hL. It is then aged for 2 years in FERRAND barrels to further develop its aromas. Finally, it receives its characteristic finish through an additional 1 year of ageing in Pineau des Charentes casks and is bottled with a dosage of 6 g/L.
This careful maturation gives the rum a complex variety of aromas and characteristic qualities.
