Loma Noble Mezcal Ensamble Rojo (42% ABV) is an artisanal mezcal from Oaxaca that brings together the distinct characters of two agave varieties in a well-balanced blend. This *ensamble* (blend) combines Espadín and Tobalá agaves: while the Espadín provides a clear agave structure and a balanced smokiness, the rarer Tobalá contributes complex floral and fruity notes. In its production, Loma Noble employs traditional methods and maintains a sustainable approach to managing its agave stocks. The mature *piñas* (agave hearts) are slow-roasted in underground earthen pits using firewood and volcanic stones, a process that creates the signature profile of roasted agave, smoke, and mineral nuances.

Following the roasting process, the agaves are crushed using a traditional stone *tahona* (millstone), after which they undergo natural fermentation with wild yeasts in open wooden vats. These artisanal techniques add depth to the Loma Noble Ensamble Rojo, ensuring that the different agave varieties meld together harmoniously. With an alcohol content of 42%, the mezcal is expressive and bold, yet it retains its delicate fruit and herbal notes. The combination of Espadín and Tobalá, traditional *palenque* (distillery) production methods, and sustainable agave cultivation makes this 0.7-liter bottling particularly compelling for enthusiasts of complex, authentic Oaxacan mezcals.
