The maturation takes place in a characteristic barrel combination of ex-Rye whiskey casks, first fill Chinkapin Oak and first fill Bordeaux red wine casks. This unusual recipe gives the whisky structure, spiciness and fruitiness, while a finely dosed smoke emphasizes the island character. It is bottled without chill-filtration and without colorant, which means that the texture, natural color and aromatic density are fully preserved.
