The Holyrood Distillery NOIR Burgundy Yeast Single Malt Scotch Whisky 47.4% Vol. 0.7 l is an innovative single malt Scotch whisky from the Lowlands region that impressively reflects the creative and experimental philosophy of the young Holyrood Distillery in Edinburgh. The distillery pursues a modern approach to whisky production and specifically uses the influence of different yeast strains to open up new aromatic dimensions. This bottling is part of the experimental NOIR trilogy, a series of Lowlands single malt Scotch whiskies in which French wine yeasts are deliberately combined with Scottish barley malt. The Burgundy Yeast Single Malt uses a wine yeast from the renowned Burgundy region, which is usually used in the production of high-quality Burgundy wines. This special yeast already produces fruity, slightly savory and complex notes during fermentation and thus significantly shapes the subsequent aroma profile of the whisky.

After distillation, the whisky is matured in a combination of ex-bourbon casks and burgundy barriques, resulting in a multi-layered interplay of sweet, fruity and spicy aromas. While the bourbon casks deliver classic notes of vanilla, caramel and oak, the Burgundy wine casks provide darker fruit flavors such as berries, plums and red grapes, complemented by a fine vinous structure and subtle tannins. Aromatically, this Holyrood NOIR Burgundy Yeast Single Malt Scotch Whisky is reminiscent of a sophisticated patisserie composition with hints of raspberry jam on digestive cookies, pomegranate, brandy snap cookies and fruity berries. The whisky is bottled at 47.4% vol. and is not chill-filtered, which fully preserves its natural texture and aromatic density.
