Gerard Bertrand’s Naturae series takes a deliberately minimalist approach, combining organic viticulture with particularly meticulous winemaking. This requires healthy, high-quality grapes. Upon arrival, the grapes are first cooled to 8 °C and then gently pressed, with the free-run juice separated from the press wine. Natural clarification occurs through cold settling of the musts. Once fermentation is complete, the wine is racked, a process that deliberately preserves fine yeasts that act as natural antioxidants.
