Production starts every year at the beginning of October, immediately after the rice harvest, when the new brewing season begins. By the end of October, the first fermentation tank is ready for pressing. The resulting sake forms the first vintage of the season, which is bottled immediately. The basis for this Japanese rice wine is the high-quality Gohyakumangoku rice variety, which is known for its elegant structure and clear aroma. The rice polishing rate of 65% ensures a good balance between fruit, freshness and structure. With 17.9% alcohol by volume, this Shiboritate Namazake is powerful, lively and aromatic.
