The Tournon Mathilda Viognier Marsanne 2023 is an Australian white wine full of character that precisely reflects the elegant yet fresh style of the Victoria wine region. The vines are rooted in podzolic soils of red ferruginous clay on slate, which give the wine its distinctive minerality, structure and depth. After the harvest, the grapes are destemmed and gently pressed before undergoing cold clarification for 48 hours. Alcoholic fermentation in stainless steel tanks preserves the freshness and fruit typical of the grape variety. The subsequent maturation on the fine lees for five months gives the wine additional texture and complexity without masking its clear style.
