The Shinobu distillery is located on the coast of Niigata, Japan, where strong sea breezes and winter snowfall provide abundant soft and clear water - known as the land of the "three whites": snow, rice and sake.
Usami Ken, the experienced master distiller, uses craft brewing methods that he has perfected over 30 years for mashing and fermentation.
The six-day fermentation process results in a new sake with a clear and firm structure and an incomparable aroma.
The Shinobu Single Malt is produced in small batches from hand-selected whisky that has been matured for at least 3 years in first-class barrels.
