Champagne Taittinger is a world-renowned champagne house that has been family-owned since 1734. This champagne house owns 260 hectares of vineyards. The house is located in Saint-Nicaise in Rems, where the champagnes mature 18 meters underground in the chalk cellar. This dates back to Roman times.
The grapes are harvested by hand at optimum ripeness and carefully pressed whole on site before being fermented in stainless steel tanks. The rose champagne matures for four years on the fine lees in the cool, deep, dark chalk cellars. By regularly shaking and turning the bottle (until it is finally upside down), the yeast sediment gradually slides into the neck of the bottle. This is followed by disgorging to remove the yeast.
