The grapes come from the historic Schlumberger vineyards in Bad Voeslau, Lower Austria, and are carefully hand-harvested before they are fully ripe, when natural acidity and emerging sweetness are in perfect balance. The whole grapes are then pressed particularly gently. This whole-grape pressing reduces the extraction of tannins, astringents, and bitter compounds, yielding primarily the clear juice from the pulp. Since there is no need to dealcoholize a previously fermented wine, the result is a unique non-alcoholic alternative that highlights the natural character of the verjus.

The verjus is refined through the maceration of white tea and a subtle hint of apricot. For the white tea, young buds and particularly tender leaves of the tea plant are used, whose subtle character contributes additional aromatic depth and a delicate natural sweetness.
