The Saint James Company grows most of the required sugar cane on its own land.
During fermentation, which lasts 24 to 36 hours, all the sugar is converted into alcohol and then distilled.
This produces the cane rum with 75% alcohol by volume, which is then allowed to rest for half a year in stainless steel tanks.
During this maturing period, the carbon dioxide and flavours produced during distillation are allowed to escape. Thus, the rum gradually gets its harmonious, pleasant aroma and taste.
The Saint James XO Rhum Vieux Agricole is a blend that is made from pure sugar cane juice.
The maturation time is between six and ten years in small oak barrels.
