Plantations rums have long since ceased to be an insider tip. The excellent rums are mainly collected in the Caribbean and also in South America and then brought to France, where they are given their finishing touches. In Ars in France, the rum is then stored for several months in small discarded oak cognac barrels. This type of ageing is known as "double ageing", a technique that was already used in the 18th and 19th centuries.

The Plantation Single Cask Rums are exclusive, limited edition rums that undergo a unique, two-stage ageing process. They are first matured in bourbon barrels in the tropics and then further refined in Ferrand barrels at Chateau de Bonbonnet in France. An additional maturation phase in specially selected beer, wine or spirits barrels emphasizes their unique character traits. Each bottle of these rare rums is personalized and numbered, with only a small number of barrels being filled each year, making them particularly desirable for collectors.

Plantation Rum Barbados Very Special Old is produced using an elaborate process involving both pot and column still distillation, starting with molasses as the base spirit. The fermentation of this premium rum takes between three and four days, which lays the foundation for its characteristic taste. The main maturation period is four years, during which the rum is stored in selected bourbon barrels. It then undergoes further maturation for another year in Ferrand barrels before the rum is finished for four months in port wine barrels, giving it an extra dimension of flavor and depth.
