This Junmai Daiginjo is produced by the traditional Ozeki house, which has stood for the highest quality in sake production since 1711. The basis of this sake is Yamadanishiki rice, which is considered the highest quality rice variety for premium sake. For this bottling, it has been polished to 45% of its original rice grain size in order to achieve a particularly pure, elegant aroma. The special feature of this Daiginjo lies in the yeast used: Imazu Benikanzakura, a new cherry blossom yeast discovered in Nishinomiya, Japan, in 2019. It gives the sake a delicate, floral profile that is complemented by a subtle honey sweetness and soft fruit aromas.
