In 1973, the Nonino family first introduced the production of their Grappa Monovitigno, made from pomace. Pomace is the solid residue that remains after the grapes have been pressed.
Nonino Grappa Monovitigno il Prosecco is made from the pomace residue of the Glera grape, which is usually used for the production of Prosecco. After distillation in copper steam stills, it then matures for 24 months in barrique barrels. It is particularly noteworthy that this grappa is bottled without the addition of additional colouring agents, which emphasizes its natural color.
