The selection of pomace is heavily dependent on the respective vintage and guarantees an authentic, unadulterated style.

Fermentation takes place anaerobically without additives in stainless steel tanks in order to fully preserve the varietal aromas. This is immediately followed by discontinuous distillation in exclusive copper steam stills renewed by Benito Nonino, whereby the first and last run are consistently separated. This very slow distillation process ensures that the volatile, aroma-forming components can evaporate and condense optimally. After distillation, the grappa rests in stainless steel for 6 months to a year, creating harmony and balance without distorting the pure character of the grape variety.
