The number 2.81 on the label stands for the number of distillations. Mortlach manages to distil his whisky 2.81 times.
The process is also called "The Way" by Mortlach and starts with a distillation process in which six different stills are used and 1/5 of them are distilled a third time by another small still called 'Wee Witchie'.
