Founded in 1743 by Claude Moet in Epernay, France, Moet & Chandon has become a leading name in the champagne market. Jean-Remy Moet, a descendant of the founder, acquired the former Hautvillers monastery in 1794, where the monk Dom Perignon developed his pioneering champagne production techniques. This was a decisive step that further consolidated the quality and reputation of Moet & Chandon.

The association with historical figures such as Napoleon Bonaparte, a close friend of Jean-Remy Moet, helped to popularize the champagne on international campaigns and increased its popularity worldwide. Moet & Chandon Champagne IMPERIAL Brut, composed of the Pinot Noir, Chardonnay and Pinot Meunier grape varieties, is carefully protected from oxidation during its production. This serves to preserve the original fruitiness of the grapes. Malolactic fermentation is also used to reduce the acidity of the grapes. Long maturation on the lees promotes the development of a fine perlage, while a lower brut dosage in comparison emphasizes the fruity character of the champagne. In addition, the champagne is matured for an average of twice as long as required by law. After this, the champagne is bottled and sealed with a natural cork.
