The harvest took place in mid to late September and was accompanied by multiple manual selections in order to process only optimally ripened grapes. This careful handling of the grapes forms the basis for precision, elegance and expressiveness.

Fermentation took place as a 14- to 21-day spontaneous fermentation on the skins at temperatures of 30 to 32 °C, followed by malolactic fermentation, which specifically developed structure and balance. The subsequent maturation for 18 months in 500-liter Austrian oak barrels gives the wine depth, spice and a clearly defined texture without masking its origin. With an alcohol content of 14%, the Carnuntum DAC is powerful yet harmonious, characterized by maturity, precision and a long-lasting presence.
