The tequila distillery has received this name because - despite modern technology - it insists on traditional methods in the production of its tequilas.
The distillery was founded more than 50 years ago in the state of Jalisco in Mexico and today up to 15,000 liters of tequila are produced here every day.
The blue agaves used for the production grow for about 8 years.
Another key element is the clear water of the surrounding mountains. The harvested agave hearts are first roasted in one of two special brick ovens, then fermented in stainless steel tanks and finally distilled. The finished distillate is then either bottled directly as young tequila or aged for up to two years in white oak barrels.
To keep the temperature in the halls cool and moist at the same time, the distillery has planted extra mango trees there. These prevent the barrel wood from drying out and the alcohol from evaporating too much.
