For this Panama rum, a combination of sugar cane juice and molasses is used as the fermentation base.
During the Panamanian dry season (from December to April), freshly pressed sugar cane juice is fermented and distilled, followed by aging in ex-bourbon barrels.
After aging for eight years, the rum is blended and finished in the famous Chateau Pape Clement barrels, from Bordeaux, France, for another six months.
