The part that is normally lost during storage remains in the wood of the barrel and is called "Devils Cut". Jim Beam developed a process to extract the concentrated liquid from the wood of the barrel. This uses the dark oak flavor of the bourbon essence to enhance this extra-long aged bourbon whiskey.
