The Holyrood Distillery NOIR Premier Cru Yeast Single Malt Scotch Whisky 47.2% Vol. 0.7 l is a modern single malt Scotch whisky from the Lowlands region that impressively reflects the innovative philosophy of the young Holyrood Distillery in Edinburgh. The distillery stands for experimental approaches to whisky production and uses creative influences in fermentation, yeast strains and cask maturation to create new flavor profiles. At the heart of this bottling is a special Premier Cru wine yeast known from the production of high-quality French wines. This special yeast influences the subsequent aroma during fermentation and gives the Holyrood NOIR Premier Cru Yeast Single Malt Scotch Whisky an elegant, fruity and finely structured character.

 

The bottling is part of the innovative NOIR trilogy, in which French wine yeasts meet Scottish barley malt before the whisky enters into a classic combination with fine wine casks from renowned wine regions. Maturation takes place in a combination of bourbon casks, Chardonnay casks and other white wine casks, resulting in a particularly complex and elegant taste. Aromatically, this Lowlands single malt Scotch whisky is reminiscent of a fine French patisserie with notes of tarte tatin, toffee, butter caramel and ripe pear. The whisky is bottled at 47.2% vol. and is not chill-filtered, which fully preserves the structure, aroma density and character of the whisky.
