The DEEP BLUE series from Emperor is characterized by an unusual storage method. The Emperor Mauritian Rum DEEP BLUE London Bridge Sauternes Finish first undergoes 12 months of maturation in old Sauternes barrels from Chateau Clos Haut-Peraguey, a Grand Cru Classe dating back to 1855.

The use of Sauternes barrels gives the rum a rich and complex aroma, as Sauternes is a sweet wine from the Bordeaux region that has fruity and sweet notes. During the ageing process, the rum absorbs the characteristic aromas of the barrels, resulting in a unique flavor development.

The rum is then stored for a further 6 months in an underwater cellar at a depth of 60 meters off the island of Ouessant in Brittany. During this time, it can interact with the maritime conditions, resulting in additional flavor nuances.
