The freshly extracted pomace is stored in special silos for several months immediately after the grape harvest. This storage phase is particularly critical, as the quality of the end product depends heavily on the conditions during this time. In order to preserve the silage optimally, it is crucial to cover the silos carefully and airtight. This prevents the entry of oxygen and creates an ideal microclimate that favors the activity of the yeasts responsible for the fermentation process.
The marc is then distilled using direct steam in a discontinuous distillation process, which takes place in eight specially manufactured copper kettles. This traditional method enables precise control of the distillation process and contributes to the purity and aromatic quality of the distillate.
This careful and controlled processing of the pomace ensures that the end product is of the highest quality and that the characteristic aromas are brought out to their best advantage.
