The Cedar Ridge Distillery was opened by Jeff Quint and his wife Laurie in 2005.
In 2009, Kolin Brighton joined to oversee the distillation process.
The Cedar Ridge Single Malt is 100% malted barley and the first aging is in new oak barrels.
The further aging process takes place according to the Solera method, which includes four types of barrels: Wine (from a local vineyard), Bourbon, French oak and Brandy.
