The olives from our quintas are harvested according to strict quality standards, with imperfect olives being sorted out by hand so that only the best fruit can be processed. After harvesting, the olives undergo a natural preparation process in which they are treated exclusively with water and salt to preserve their authentic taste and freshness.
The olives are then pasteurized, which allows them to be kept for up to 24 months without resorting to artificial preservatives. This gentle process guarantees a high-quality end product that impresses with its natural taste and longevity.
