Akashi whisky is the only whisky in the world to be produced under the direction of a toji, a grand master of sake production. This unique production method integrates numerous traditional sake production techniques.
Among other things, smaller pot stills are used, which differ from those typically used in Scottish and Japanese distilleries.
This blended whisky first undergoes a two-year maturation phase in Japanese American oak shochu casks, followed by ageing in bourbon casks.
The final stage is a one-year finish in sherry casks, which gives the whisky its full flavor.
