Ribolla Gialla, an indigenous white wine variety from Friuli and Veneto, is synonymous with freshness, delicate aromas, and a lively acidity. In AI GALLI's version, this classic grape variety is vinified with great care and transformed using the Charmat method into a stylish brut sparkling wine that perfectly blends modernity and regionality.

The grapes are carefully harvested, gently pressed, and the must fermented with selected yeasts at a controlled temperature of 18–20°C. The base wine then undergoes a second fermentation in pressure tanks, where it develops its fine bubbles under controlled conditions (14–16°C). Once the desired pressure is reached, the wine is stabilized at –4°C and then rests on the fine lees for approximately one month. This process gives Ribolla Gialla Brut its freshness, clarity, and elegance.
