The AI GALLI Prosecco Extra Dry Millesimato DOC 2024 is an Italian Prosecco DOC made from 100% Glera grapes sourced from the winery’s own vineyards in Pramaggiore. The vines grow on medium-textured, clay-rich soils, which form the foundation for this elegant sparkling wine. After being hand-harvested, the grapes are gently pressed and the must is cold-settled. The first fermentation then takes place in stainless steel tanks at a controlled temperature of 18 to 20 °C for about ten days using selected yeasts. In this way, AI GALLI combines meticulous vineyard work with precisely controlled winemaking.

For the second fermentation, the base wine is transferred to a pressure tank and fermented for 18 to 20 days at 14 to 16 °C using active yeasts. Once a pressure of about 6 bar is reached, the wine is cooled to -4 °C to halt fermentation and initiate stabilization. This is followed by approximately one month of aging at a controlled temperature before filtration and bottling under isobaric conditions. As a Millesimato 2024, this Prosecco Extra Dry from Veneto combines a clearly defined vintage with the classic Glera grape variety and a finely tuned sparkling wine production process. With an alcohol content of 11% in the 0.75-liter bottle, it is designed for fresh, youthful enjoyment.
