AI GALLI Prosecco Brut DOC 11% Vol. 0,75l

AI GALLI Prosecco Brut DOC is a finely bubbly, elegant sparkling wine made from 100% Glera grapes from the AI GALLI winery's own vineyards in Pramaggiore, a particularly renowned area in eastern Veneto. The vines grow on medium-density clay soils, which lend the Prosecco freshness, structure, and a subtle minerality. This Prosecco is carefully produced using the Charmat method and is an authentic representative of a modern, fruit-forward Brut style.

The grapes are harvested by hand, gently pressed, and cold decanted. The must then ferments for 10 days at 18–20°C using carefully selected yeasts. The base wine is then further fermented in pressure tanks for 18 to 20 days at 14–16°C to produce the foam. Once the desired pressure of approximately 6 bar is reached, the temperature is lowered to -4°C to halt fermentation and stabilize the wine. Further maturation on the lees for over a month enhances its finesse and aromas. Isobaric bottling then follows.
