The Villa Sandi winery, located in the heart of the Prosecco region of Veneto, Italy, is a renowned winery known for its high-quality sparkling and still wines. Villa Sandi, a magnificent 17th century building, serves as the impressive headquarters of the winery and reflects the rich history and tradition of winemaking in this region.

Villa Sandi is particularly famous for its Prosecco production. The grapes grow on the hilly landscapes of Valdobbiadene, where the microclimate and mineral-rich soils provide ideal conditions for cultivation. The grapes are carefully harvested by hand to ensure the best possible quality. Sustainability and environmental protection are paramount, which is underlined by modern techniques and numerous certifications.

The base wine cuvee for the Prosecco consists of Glera and Pinot Noir grapes from Veneto and Friuli-Venezia Giulia, regions with ideal marly soils. The white grapes are placed in a pneumatic press and the must obtained is placed in temperature-controlled tanks. The red grapes are lightly macerated at 22-23°C to extract color, tannins and aromas.

The white must is blended with a little red wine and mixed with special yeasts from Villa Sandi. This cuvee ferments at 15-16°C in barrels to preserve the aromas. Once the desired alcohol and sugar content has been reached, fermentation is stopped by cooling. After maturing on the lees for two months, the sparkling wine is ready for bottling.
