The Jericho Classic takes up the traditions of the Jericho distillery founded by William Smith in the Scottish Highlands in 1822. This distillery was characterized by the high quality of its products, which were produced using locally grown barley, peat from the surrounding moors and water from the nearby Jordan Burn. The whisky was matured in ex-sherry casks, which gave it a distinctive aroma.

There are many former distilleries in Scotland, such as Jericho, that have disappeared over time. Some of these distilleries are now experiencing a kind of rebirth.
