The entire range of The Irishman brand is produced at the Walsh Whiskey Distillery, which was founded in 1999 by Bernard and Rosemary Walsh. With a background in time-honored recipes from Ireland's whiskey distilling era, they strive to revive the recognition of these Irish whiskeys. Each bottle of the brand is numbered, marked with the year of bottling and bears the signature of Bernard Walsh.

The Irishman is distilled three times, which gives it its special purity and smoothness. It is then matured in selected ex-bourbon and ex-sherry casks, allowing it to develop its complex aromas and rich taste.
