The distillates mature for between six and 23 years in former bourbon, sherry and Pedro Ximenez wine barrels at an altitude of 2,300 meters in the traditional Zacapa rum warehouse. The distillates are blended using the solera method, a blending and ageing system developed by the Spanish to perfect sherry. A final maturation in double-burnt American oak barrels, in which American whiskey was previously stored, gives Zacapa Edicion Negra its unique character.
Under the watchful eye of master blender Lorena Vasquez, a dark rum with smoky intensity, woody and spicy notes is created, which stands out from the caramel aroma of Zacapa 23.
