The mezcal Pechuga de Codorniz, created by Rey Campero, is an exceptional product that embodies the craftsmanship and tradition of mezcal production. Produced in the Sanchez y Asociados distillery in Oaxaca de Juarez, the capital of Oaxaca, the agustifolia agave undergoes a meticulous process: after harvesting, it is roasted and fermented over a period of 12 days with natural yeast. This is followed by double distillation in copper stills.
