The Poli distillery was founded in 1898 by GioBatto Poli. Today it is run by the four siblings Jacopo, Geampaolo, Barbara and Andrea Poli. It is located in the northeastern Italian municipality of Schiavon, in the province of Veneto.

Segretario di Stato is an Italian whiskey from the Poli distillery. Poli is known for unique grappas, but decided to produce their first whisky in honor of the citizens of Veneto on October 15, 2013. This excellent whisky is made from pure barley malt and distilled by hand with Atanor. The water used to make the whisky is of exceptional purity and quality. This comes from Monte Grappa, which has been designated a biosphere reserve by UNESCO. The 5-year aging of the Italian malt takes place in oak barrels, after which it acquires its finish in Amarone barrels for one year.

The name "Segretario di Stato" as well as the depicted St. Peter's Square on the label of the whiskey were duly authorized by the Secretariat of State of the Holy See.
