In addition to the typical red wine varieties such as Merlot, Cabernet and Pedit Verdot, white grape varieties are also successfully cultivated.
The grapes for this Ornellaia are harvested by hand in 15 kg crates. This is followed by a double selection and light pressing. Each grape variety and each vineyard parcel is vinified separately. Alcoholic fermentation takes place for one week in steel tanks at around 26-30°C. The next 10-15 days follow the
maceration. The malolactic fermentation takes place mainly in oak barriques (70% new and 30% first fill). The wine matures for 18 months in the barriques in the temperature-controlled cellar of the Ornellaia winery. After the first 12 months, the wines are blended into a cuvee and mature for a further 6 months in the barriques. After the subsequent 12 months of bottle ageing, the wine is released for sale.
