Mendez Medium Sherry 15% Vol. is produced by Bodegas Williams & Humbert. The company was founded in Jerez in 1877 by the English Alexander Williams and Arthur Humbert. Williams & Humbert are also allowed to own the winery " Las Conchas", a 220 hectare sherry area.
The grapes come from the famous "Jerez Superior", a sherry triangle between Jerez, Sanlucar de Barrameda and Puerto de Santa Maria. The processing and bottling takes place in Jerez.
The cheese is matured according to the Solera and Criadera method with a maturation period of 3 years.
