The famous champagne brand Dom Perignon takes its name from a 17th century Benedictine monk, Dom Pierre Perignon. The monk tried to make the best wine in the world for 47 years.
In 2010, the winter was very severe, the spring very dry and late, and the summer moderately hot. Two days of rain now brought the trajectory to a halt. Mainly on the Pinot Noir, botrytis mold developed in just a few days. A decision now had to be made quickly. Dom Perignon used all its resources and saved the Pinot Noir grapes. The 2010 vintage is now described as 'rescued from the water'.
