The Savanna distillery, located at the foot of the Piton de la Fournaise volcano and on the shores of the Indian Ocean, has been producing rum by hand from sugar cane juice and molasses since the 19th century. For Savanna HERR 57, the distillery transforms molasses into a real ester experience - which is unusual for rum from the overseas departments.
With an impressive content of 796 grams of esters per hectoliter of pure alcohol, this unaged pot still rum puts its Jamaican relatives in the shade.
The esters are created during a particularly long fermentation process, in which the molasses from the Bois Rouge sugar cane variety ferments for a full eleven days.
