The mesoclimate of the Carnuntum region also benefits from the influence of Lake Neusiedl and the nearby Danube. This climatic combination ensures optimal ripeness of the grapes and at the same time preserves a lively acidity and fresh fruit. The selective hand-picking took place on September 21, 2023, followed by careful whole-cluster and single-berry selection in the cellar. Fermentation takes place in stainless steel tanks at a maximum temperature of 28 °C, accompanied by regular flooding of the mash cake to extract the color, aromas and tannins in the best possible way. After around two weeks of maceration, malolactic fermentation takes place in used barriques.
